I’ve experimented with a lot of different diets in my life including Atkins Meat diet but I always had digestion problems and never truly felt good until I stopped eating meat and just ate a vegetarian diet. I do eat the occasional egg, cook with butter and I love cheese.
I’m Gluten Free
Recently I’ve been feeling old beyond my years, my joints hurt and I get tired quickly. My dad would say I was just getting old and laugh but I visited a doctor because I had a nagging ‘seal’ like cough that just wouldn’t go away. I shared a few of my other symptoms and asked if I could possibly do some tests for my thyroid. When the tests came back it felt like I failed the final exam. All my numbers were bad especially my iron (which was extremely low and still is) and my thyroid. Many tests later I am diagnosed with Hashimoto’s Thyroiditis, an auto immune disease. I started on thyroid medication and iron supplements but I wanted to find a more natural solution and through research I found that by modifying my lifestyle, especially diet, I could reduce my symptoms and possibly reverse them. I decided a good place to start would be to transition to a gluten free diet.
I am hoping that through this blog I can help others with this condition or simply share my experiences as I journey down a whole new highway.
